Vegetable Curry


Mixed Vegetables (fresh) 2lb
Olive Oil 4/5 Table spoons
Garlic 4 Cloves
Onion 1 Medium size
Coriander Powder 1 Table spoons
Turmeric 1.5 Table spoons
Cumin 1 Table spoons
Ginger .5 Table spoons
Paprika 1.5 Table spoons
Garam Masala 1 Table spoons
Tomato Puree 1 Small Can


1: Cut up vegetables into convenient sizes
2: These should be well washed
3: Mix all spices and make a paste like single cream
4: Slice the onion into long strips
5: Crush or slice the garlic

Cooking Method

1: Boil the vegetables in a large pan until they are partially cooked and, drain.
2: Heat oil in wok or large frying pan, add onions and garlic -cook for 1 min.
3: Put the spices mixture and tomato puree and cook for 1 min.
4: Add vegetables and mix them up with a wooden spoon - cook for 2/3mins.
5: When the oil separate, transfer the curry into an oven proof dish and put in the oven for half an hour.
6: Serve with boiled rice, fresh tomato, cucumber and sliced onions .
